Ingredients
1 HMR Vegetable Stew with Beef Entree 1-2 red potatoes (8 oz. total) ½ cup corn ¼ cup broth (vegetable, beef, or chicken) Butter substitute to taste Salt and pepper
Instructions
- Microwave the potatoes until soft.
- Mash the potatoes with the broth, adding butter substitute, salt and pepper. Set aside.
- Pour the entree into an 8” casserole dish.
- Add the corn in one layer on top of the entree.
- Spread the mashed potatoes over the corn.
- Microwave until warm. (For a golden brown top, heat at 350 degrees for 15-20 minutes.)
